Bread Head's Focaccia Sandwiches Are Coming to Woodland Hills

The Trois Mec alums' fourth shop opens in December in Topanga Village's old Veggie Grill space, with beer, TVs and the Grinder.

Hot coppa, smoked ham, salami cotto and provolone, stacked on a bread that lands somewhere between focaccia and ciabatta. That's the Grinder, and it's headed for Woodland Hills.

Bread Head, the sandwich shop from former Trois Mec chefs Alex Williams and Jordan Snyder, will open its first Valley location in December, Eater LA reported Tuesday. The shop is going into the old Veggie Grill space at 6316 Topanga Canyon Blvd. in Topanga Village, according to Fast Casual.

So a cold-cut shop is taking over a former Veggie Grill. The vegetarians aren't left out, though. Bread Head's Mozzarella sandwich comes with fresh mozzarella, avocado, alfalfa sprouts, pickled red onion and a za'atar spread, Eater LA said, and WhatNow reported the menu also has a vegan wrap.

Eater LA counts these among the best focaccia sandwiches in Los Angeles, and the bread is the reason. The chefs bake their own loaf, which Eater LA described as flaky, with a springy middle and a crisp crust.

There's a reason to show up on a particular weekday, too. According to WhatNow, the daily specials run meatballs on Monday, roast pork and broccoli rabe on Tuesday, a Cuban on Wednesday, a Reuben on Thursday and sausage and peppers on Friday. The regular lineup goes from a Calabrian turkey and a muffaletta to breakfast burritos and kids' sandwiches.

The Woodland Hills shop gets a few things the brand doesn't usually lead with: seats inside, TVs, beer and catering, Eater LA reported. The beer has paperwork behind it. WhatNow reported that the location first showed up in a liquor license application filed for the space.

Its neighbors will be the center's Costco, REI, Cava and Pitfire Pizza, per WhatNow. Bread Head announced the move on social media in mid-September, writing, "The secret's out… we are coming to Woodland Hills! Tell everyone you know," WhatNow reported.

It's been a fast climb for a shop that started as a pop-up. Williams and Snyder met at Trois Mec, where they earned a Michelin star, then worked out their sandwiches at pop-ups and catering gigs, according to WhatNow. Fast Casual reported that the first permanent shop opened in Santa Monica in June 2024, with Manhattan Beach following in June 2025 and Westwood in November 2025.

The partners have bigger plans. Williams and Snyder joined Greg Willsey and Michael Pasternak to form Bread Head Restaurant Group, which was set up to open shops across the country, WhatNow reported.

Woodland Hills gets the Grinder first. Thousand Oaks is next: Bread Head plans a fifth shop there in the second quarter of 2027, Fast Casual reported.
