PopUp Bagels' Rip-and-Dip Bagels Are Coming to Calabasas
Construction is well underway at 4799 Commons Way, though the bagel chain hasn't announced an opening date.

PopUp Bagels won't slice your bagel, and it won't build you a sandwich. It hands the thing over hot and whole and leaves the tearing to you. That ritual is headed to The Commons at Calabasas, where What Now Los Angeles reported Tuesday that construction has already started on a shop at 4799 Commons Way.
The build is far along, PopUp told What Now by email, but the chain hasn't named the day it opens. Calabasas is part of a Southern California push run by franchise group Sweetzer Capital, which signed on in 2025 to build 25 PopUp Bagels shops across Los Angeles and Orange counties. Brentwood came first, on San Vicente Boulevard in December 2025. Studio City, on Ventura Boulevard, followed in August.
The chain is blunt about how it works. Its own site says it started in Westport, Conn., under founder Adam Goldberg. It swaps out its schmears every week and bakes all day long to keep up with the lines. The move even has a name, Grip, Rip and Dip: tear off a hunk, drag it through cream cheese, repeat. The brand insists its lines move fast, though. It calls the wait "part of the experience."
Calabasas just gets to start waiting early.
