There's a curtain at the back of Daisy Margarita Bar on Ventura Boulevard in Sherman Oaks. Since October, it's led upstairs to a 24-seat rum bar nobody's allowed to photograph.

That's Gilbert Pérez Bar, the newest room from the team behind Mírate and Daisy, and it's the pick for one reason: the only way to see it is to get one of those seats. The bar runs a no-phones, no-photos rule, and its room changes every 50 minutes, The Spirits Business reported.

Daisy's own site still lists the bar as "Opening soon," but the terms are plain: just 24 seats, and reservations required, The Infatuation reported. Nobody wanders in off Ventura.

The 50-minute cycle is the gimmick, and it's a specific one. Visuals and staged, interactive bits move the room through what the team calls "portals" to different parts of Mexico, according to The Spirits Business, and a rotating drink list follows each stop with that region's ingredients and spirits. One stop is a single night in Guadalajara back in 2009, when the mezcal bar Pare de Sufrir first opened.

The person building those lists is Max Reis, the beverage director at Mírate and Daisy. The bar pours 75 small-batch Mexican rums, aguardientes and charandas, and Reis plans to use them to show that rum can do a lot more than tropical drinks, The Spirits Business reported. The bar's own blurb on Daisy's site still promises tropical flavors, spectacle and "a splash of chaos," so the lesson comes with some theater.

One thing doesn't move: a core cocktail menu stays available whatever region the room has landed in. The drink the team has put out front is the Primordial Frutero, a clarified mix of more than 10 fruits. I'd start there, because it's the one glass on the list that won't vanish when the walls change.

The name is part of the act. Daisy's site tells the legend of Gil Pérez, a Filipino-Spanish soldier said to have been pulled through a portal and dropped in Mexico City in 1593. Adean Studios modeled the room on a Mexican cantina, with photos, artwork and knickknacks from or inspired by Mexico covering just about every surface, per The Spirits Business.

The team's track record holds up. Mírate placed 28th on The 50 Best Bars in North America 2026 and made a Spirited Awards shortlist, and Daisy, which opened in May 2025, was a Spirited Awards finalist for New US Cocktail Bar. Downstairs, Daisy's kitchen belongs to chef Alan Sanz, according to its site. The Infatuation has already flagged the upstairs bar, on Oct. 29, though its writers had not yet been.

The address is 14633 Ventura Blvd. Everything past the curtain stays up there, which is the whole point of a no-photos rule.
